puttanesca

ingredients

1 can tuna in oil
1 can whole peeled tomatoes
1/4 cup capers, chopped
1/4 cup pitted black olives
6 anchovy fillets
4 garlic cloves
extra virgin olive oil
pinch red pepper flakes
spaghetti
finely grated parmesan, for serving

Sizzle oil, garlic, anchovies, and red pepper flakes, in a skillet over medium heat. Fry until garlic is lightly golden.

Add capers and olives, stir. Then add tomatoes, and bring to a light simmer. Add tuna, flake it up, then remove from heat.

Meanwhile boil the pasta until just under two minutes under the full cooking time.

Using tongs, transfer pasta to sauce. Add a few tbsp of pasta water to the sauce. Bring to vigorous simmer and cook, stirring and shaking the pan until pasta is fully cooked. Add more pasta water as necessary to keep the sauce loose.

Remove from heat and stir in extra olive oil and parmesan.
