Clean the okra by wiping with moist paper tissues. Remove the tops and bottoms, then halve lengthways.

Drizzle with cooking oil. Gently coat with potato starch, being careful not to agitate them.
Cook in air fryer at 190 for 7 minutes.

Meanwhile, prepare the flavour coating by mixing kashmiri chilli powder, salt, a little sugar, tiny amount of turmeric powder, rice flour, and polenta.
Put the fried okra into the bowl and mix to coat.
Air fry the okra for a further 7 minutes at 190. Check it around 6 minutes in, and adjust the time if needed.
