pandu's coconut rice

ingredients

2 cups rice
2 cups coconut milk
1 red onion, cut into thin slices
5 chillies, slit in half lengthways
cashews, split in half
2 bay leaves
1 tbsp ginger garlic paste
2 tsp garam masala
coriander, chopped
ghee

Wash rice and set aside.

Thinly slice the onion, slit the chillies, and halve the cashew nuts.

ghee | cashews, split in half | 2 bay leaves | 1 red onion, cut into thin slices | 5 chillies, slit in half lengthways | 1 tbsp ginger garlic paste | 2 tsp garam masala

Add ghee to a pan on medium heat, then add the cashews and bay leaves. Once the cashews are golden, add the onion and chillies. When the onions are pale/soft, don't wait until they're brown, add ginger garlic paste. Add garam masala and mix well.

Add the washed rice to the pan and mix well. Let it stay on heat for a few minutes.

2 cups coconut milk | coriander, chopped | 1 cup water | 1 tbsp salt

Put the rice mixture, coconut milk, chopped coriander, 1 cup of water, and 1 tbsp salt into the rice cooker. Mix well and set to cook.
