6 eggs, yolks separated
170g sugar
100g self raising flour
vanilla extract, splash

instructions

Preheat the oven to 170 with fan.

6 egg yolks | 120g of 170g sugar | vanilla extract, splash

Whip the yolk, 120g sugar and splash of vanilla extract until light pale and fluffy. You can also whip in any other flavourings eg. pandan at this point.

100g self raising flour

Mix flour into the mixture.

6 egg whites | 50g sugar

Whip up egg whites with 50g sugar.

Fold egg whites into the main mixture, then place in oven for around 30 minutes.
